In the Nansebo Woreda (district), the Testi West Arsi Washing Station is the centre point for about 850 smallholder coffee producers in the area. Coffees in Ethiopia are typically grown on very small plots of land amongst other crops. During harvest season, the growers deliver their cherry to the washing station, where their coffee will be sorted, weighed, and paid for or given a receipt.
The coffee is then blended into ‘day lots’ before being depulped, fermented for 24–48 hours, and washed before being dried on raised beds for 12–15 days. Because the offering of these growers is so small scale, the coffees are blended with others from the area, rather than kept separate from farm to farm. The blending of these cherries into day lots makes it virtually impossible under normal circumstances to know precisely whose coffee winds up in which bags on what day, making traceability to the producer difficult. While there is no question about the quality of the coffees that come from Nansebo, it’s our future focus to improve the transparency around the source, and learn more about the talented farmers who bring us such beans.
V60 POUROVER BREW GUIDE
Recipe Starting Point (Pour Over):
250mL water (93 Degrees C)
Note: We have developed a filter profile for this coffee - meaning it is roasted a little lighter than would normally suit an espresso brew method. If you're using an espresso machine, high-pressure Aeropress, or prefer a darker roast for your percolator, we recommend our Single Origin Espresso Roast. However, we're more than happy to supply any of our coffees ground to any specifications - coffee is a personal journey, and we are excited to take that journey with you.
