PEACH, TOFFEE AND GOLDEN SYRUP


Both children of coffee growers, Masui and Eddy are the owners of Selva Negra in Matagalpa, Nicaragua. Amongst the forest walking trails full of ancient relics and native animals, they bought a coffee farm in 1974 shortly after getting married, and called it La Hammonia (meaning Hamburg) as a nod to their German heritage. The farm has grown into the Selva Negra estate – a working coffee farm, produce farm, eco village and restaurant – all made in Mausi and Eddy’s future focused vision. They have a philosophy that everything on the farm must have 2-3 uses (see below for more detail). 


Certified organic, La Hammonia has 12 separate lots each separated by varietal and unique in its elevation (ranging from 1200-1400masl). The lots are shade grown and are fed additional nutrients with an organic fertiliser made on site. Their nursery is used to sprout and grow new trees, as some are over 65 years old and are due to be replanted.


Along with growing coffee, Selva Negra has developed into a completely self-sustaining eco village. There is a vegetable garden which provides fresh produce for the restaurant, along with pigs, cows and chickens for meat and eggs. There's also a bakery and a cheese making facility, all of which are powered by solar panels peppered on the rooftops of the estate. The farm produces everything it needs to operate – even the water processing creates methane gas which is captured and used for cooking. 


The restaurant and lodge provide a pathway for pickers to learn new skills and undertake new employment in the off season – the restaurant manager herself started out as a coffee picker on the farm. There is a village on the farm with housing, a school for the children of the growers, a medical clinic, and a diamond to play Nicuaragua’s number one sport – baseball (they even have a team competing nationally). The workers have power, running water and satellite tv. They are charged $1 per year in rent so that they have legal tenancy leases.


Many farms are forward thinking and take great lengths to meet the needs of their workers, but none are as holistically invested in the welfare of their workers like Selva Negra. There’s a family spirit driving this enterprise that makes it a very special place. It's an incredible farm to visit for the experience of seeing what can be achieved with an open mind and a true goal of sustainability.

Note: We have developed an espresso profile for this coffee - meaning it is roasted a little darker than would normally suit filter brew methods. If you're using pour over, Aeropress, batch brew, plunger or other filter brew methods we recommend our Single Origin Filter Roast. However, we're more than happy to supply any of our coffees ground to any specifications - coffee is a personal journey, and we are excited to take that journey with you.
