We selected this coffee for its unique "Koji" processing method—a first for both Forest Coffee and our menu at Wide Open Road. Cupping this coffee was a truly exceptional experience, revealing vibrant fruitiness and remarkably distinct flavours.
Description:
This coffee showcases an innovative processing technique using Aspergillus Oryzae, a fungus celebrated for its flavor-enhancing properties. The process begins by cultivating the fungus on steamed rice, which is then dried and ground. This Koji preparation is combined with coffee beans for anaerobic fermentation, resulting in a distinctive white layer on the beans. The end result is a cup with extraordinary depth and complexity.
