This coffee comes from smallholders from the Planadas and Canon de las Hermosas regions. Coffees from selected growers are cupped and analysed individually in order to use only the best lots for the blend. Once selected, the green coffees are combined, milled in Bogota and transported to Descafecol ready for decaffeination.
The coffee must undergo a low-pressure steaming process for at least 30 minutes so the pores of the coffee can open up, allowing for caffeine extraction. The coffee is then placed in a solution of water and ethyl acetate – a naturally occurring compound and solvent derived through the fermentation of sugarcane.
Once the coffee is saturated, the tank is drained and a fresh solution is introduced. This continues for a period of about 8 hours. After the last of the caffeine has been extracted, the coffee is removed from the solution and prepped for a final low-pressure steaming to remove any remaining traces of E.A. The coffee is then dried, physically polished to ensure cleanliness, and packaged ready to export to your favourite cafe.
