San Ignacio and Jaen are provinces located up north in the department of Cajamarca that boarder Ecuador. This area is well known for its pristine and beautiful natural forests and being the coffee capital of Peruvian. It is a place with long political and religious history which in the past years has seen a lot of growth in part through the production of coffee bringing prosperity and development. Both San Ignacio and Jaen are renowned for environmentally friendly practices and have become tourist hotspots.

El Guayacan take its name from a local native tree with beautiful yellow flowers that grows wild throughout the coffee landscapes in northern Cajamarca. These trees are  utilised on farms  to provide shade and protect coffee plants.

The coffee producers of this area are passionate about specialty coffee. They also manage a sustainable agriculture being conscious of the biodiversity and taking care of the environment, having an adequate management of wastewater and pulping waste. 

Most of the producers of this areas come from the Cajamarca Sierra and Piura. The farms tend to show a great biodiversity of natural species, clay soils and constant rain. These characteristics are because of the influence of the Huamantanga Forest and National Santuary of Tabaconas – Namballe, which create ideal microclimatic conditions to produce specialty coffee in the area.

General rule of thumb is 65g coffee to 1000ml water
We like to brew our pour overs' at 15g / 250ml, finishing between 2:30min and 3:30min

Throw in some paper filters, it's the worst when you run out!
