‌Finca Beti is the first coffee farm of Project Origin, nestled in the Santa Barbara region. After spending many years visiting coffee farms, building a strong relationship with producers Jorge and Maria Lanza, and driven by a passion to to understand every facet of the coffee journey, Saša Šestic (the 2015 World Barista Champion) decided to invest in his own coffee farm. Saša wanted to explore coffee production, experiment, and share his experiences with the local farming community. The neighbouring farm, planted with bourbon, catuai, and pacamara trees, became available in 2013 and was lovingly named after Saša's wife, Beti. With the assistance of the Lanza family, Saša focused on learning about processing and fermentation, drawing inspiration from winemakers. The farm follows specific processing steps, including picking only ripe red cherries, pulping and dry fermentation in concrete pillars under shade for 10-14 hours, followed by sun drying on raised beds for 12-15 days.
