Located in the former Central Province of Kenya, north of Nairobi, lies the Kamunyaka Factory Farm in Nyeri County. The farm sits on deep red volcanic soils, rich in organic matter, at about 1700masl elevation.
When the cherries are ripe they’re hand picked into buckets in the early morning and carried to the wet mill. They then spend the afternoon splayed out on the patio in the afternoon light. They’re tipped into a hopper above the pulping station, where fresh water is poured onto the cherries, funnelling them into a chute where the outer fruit is removed before they spend the night in fermentation tanks. The beans are thoroughly washed and slide down a tiled channel where wooden shunts are used to repeatedly push the coffee back to the top of the channel. This action separates the lighter and denser beans so that the dense, higher quality beans are the only ones able to make their way through. The beans are then sun-dried on raised tables under careful supervision, before being bagged up and transported to the dry mill.
